- Tuesday: purchasing stops buying sea bass — too expensive this week. It says so in its own group.
- Opening day: the kitchen finds out at the pass.
With FDI
- Tuesday morning, the owner's brief carries one line: the menu promises a dish whose ingredient purchasing has stopped buying — both messages shown, with where each came from.
- The owner sends the kitchen one request, with a date. It comes back answered, with a reason: grilled mullet instead.
- The opening menu changes before a guest is told anything.

Cameras that describe places, never people.
